Super Quick - 1 Pot Spinach Tortellini Soup
A hearty meal with only 5 ingredients!
Ingredients

1 cup chicken broth
- can substitute vegetable broth

1 cup spinach
- can substitute power greens

1/4 cup carrots
- grated or shaved

4 cheese tortellini

1/4 tsp parmesan cheese
- grated
Instructions
- Add broth to a pot and bring to a simmer over medium heat. Add carrots and spinach and cook for 3 minutes. Add tortellini to simmering broth and cook until soft, about 5 min.
- Pour into a bowl and top with parmesan cheese.
