Sweet Potato and Kale Frittata
There are so many variations of a frittata you can try. This one is a winner!
Ingredients

1/2 sweet potato
- baked, with skin on

1 cup kale
- packed, rib removed

3 eggs
- beaten together

1 1/2 tbsp goat cheese

1 tbsp olive oil

salt and pepper
- to taste
Instructions
- Crack eggs into a medium-sized bowl and mix with a whisk or a fork.
- Coat the bottom and sides of a baking pan with 1 tbsp olive oil.
- Take your sweet potato (already baked) and take the skin off. Cut your sweet potato into bite-size chunks and sauté in a pan with 1 tbsp olive oil for about 5 minutes. Add the kale and cook until it is wilted.
- Put the sweet potato and kale in your prepared baking pan. Pour eggs over sweet potatoes and kale. Add crumbled goat cheese over the egg mixture.
- Bake in a preheated 375º for 15 minutes, let cool for 10 minutes, and then enjoy!
