Tom Kha Gai Soup
Don't be intimidated by the name. This is a simple and tantalizing taste of Thailand!
Ingredients

3/4 tsp coconut oil

3/4 tsp ginger

1/4 tsp garlic
- minced

3/4 tsp red curry paste

1/4 cup mushrooms
- any fresh variety will work

2 oz snap peas
- strings removed and cut into bite sizes pieces

1/8 cup onions
- diced
-
1/2 cup chicken broth
- can substitute vegetable broth
-
4 oz coconut milk
- organic preferred

1/6 cup chicken
- *raw or cooked, diced

fresh basil
Instructions
- Put oil in a pot and cook on med/high heat until oil melts.
- Add ginger, garlic, and red curry paste and stir well.
- Add mushrooms, snap peas, onions, broth, and coconut milk. Cover and cook for 5 min.
- *If you are using raw chicken, cut it into small pieces and add just after the garlic. Cook chicken through before adding the red curry paste.
- Add cooked chicken and cook an additional 5 min. Garnish with fresh basil.
