Tomato Soup
This homemade tomato soup is sure to warm your heart and soul!
Ingredients

1/2 cup vegetable broth (organic, low-sodium is best (can substitute chicken broth))

1/4 cup onion
- chopped

1/4 cup chopped celery

1 cup tomatoes
- diced, canned

1/4 cup yogurt
- can substitute non-dairy, unsweetened milk
-
salt and pepper to taste

1 tbsp fresh basil
- sliced
Instructions
- Put broth, onion, celery, and tomatoes in a pan and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Put tomato mixture in a blender and blend until smooth and pour back in pot.
- Add yogurt or milk, salt and pepper.
- Serve warm soup in a bowl and top with basil.
