Tuscan Chicken
This dish is like a Mediterranian flavor vacation without leaving home!
Ingredients

1 chicken breast

1 tbsp flour

1/4 tsp dried oregano

1 tbsp olive oil

1/2 onion
- diced

2 cloves garlic
- minced

1/4 cup sun-dried tomatoes
- diced

1/4 bell pepper

1 1/2 tsp tomato paste

1 1/2 cups packed spinach

3/4 cup whole milk
-
1/4 cup parmesan
-
salt and pepper
- to taste

1/4 cup fresh basil
- chopped
Instructions
- Cut chicken breast in half lengthwise. Sprinkle breast with salt, pepper, and oregano. Dredge the chicken in flour.
- Add 2 tbsp oil to a pan. When hot add chicken, and cook over med-high heat until browned, about 5 minutes. Flip and cook for an additional 5 minutes on the other side. Remove chicken from pan.
- Add 1 tbsp oil. Then add chopped onion, garlic, and pepper. Stir and cook for 3 minutes. Add sun-dried tomatoes, and tomato paste and stir well. Add spinach and once wilted add milk, parmesan, and salt and pepper. Return chicken to pan and heat through.
- Sprinkle with chopped basil when served.
