Vegetarian Rueben
Breadless, meatless, and super healthy but delicious nonetheless!
Ingredients

1/2 cup vegetables
- cooked, your choice

1/4 cup sauerkraut

1/8 cup thousand island dressing
- optional recipe in notes

1/2 slice Swiss cheese
Instructions
- Preheat oven to 325º.
- Coat oven-safe pan with olive oil.
- In a large bowl mix veggies, sauerkraut, and thousand island dressing and pour into a baking pan. Cover with cheese.
- Place in preheated oven for 20 minutes or until hot and cheese is melted.
