  1. Preheat oven to 325º.
  2. Coat oven-safe pan with olive oil. 
  3. In a large bowl mix veggies, sauerkraut, and thousand island dressing and pour into a baking pan. Cover with cheese.
  4. Place in preheated oven for 20 minutes or until hot and cheese is melted.
