White Bean, Fennel and Sausage Soup
This soup offers a delicious variety of textures and flavors.
Ingredients

1 tsp oil
- grapeseed or avocado are ideal

1/6 fennel bulb
- diced

1/6 medium onion

1/2 clove garlic
-
1/6 tsp crushed red pepper
- more or less to taste

2/3 cup chicken broth
-
1/3 lb chicken sausage
- Italian is preferred, chopped

1/2 cup white beans
- drained
-
fennel greens
- optional
-
salt and pepper
- to taste
Instructions
- Use a non-stick pan or cast iron skillet to cook chicken sausage until done. Set aside.
- Add oil to a large pot and heat on the stovetop over medium heat. Add fennel, onion, and garlic. Stir then cover and cook for 5 min.
- Add broth and red pepper and cook for 15 min. Add sausage and beans and cook additional 10 min. Add salt and pepper to taste.
- Serve in bowls and top with minced fennel greens (optional).
