White Bean, Fennel and Sausage Soup

  1. Use a non-stick pan or cast iron skillet to cook chicken sausage until done. Set aside.
  2. Add oil to a large pot and heat on the stovetop over medium heat. Add fennel, onion, and garlic. Stir then cover and cook for 5 min.
  3. Add broth and red pepper and cook for 15 min. Add sausage and beans and cook additional 10 min. Add salt and pepper to taste.
  4. Serve in bowls and top with minced fennel greens (optional).
