Sweet Potato Cakes (5 ingredients)
These are a delicious and versatile dish that can be enjoyed with any meal.
Ingredients

1 1/2 sweet potato
- cooked until soft

1/2 cup corn
- can use frozen; organic preferred

1 egg

1 tbsp corn starch

1 1/2 tsp coconut oil
Instructions
- Mash up the sweet potato and add all ingredients to it. Stir until well blended.
- Add coconut oil to a pan and heat on medium heat.
- Form sweet potato mixture into small patties and place in the pan once it is hot. Cook on one side until browned and then flip. Cook on the other side until browned. Enjoy
