Asian Salad
It’s the perfect balance of crunch, color, and bold flavor, satisfying enough for a meal, yet light and refreshing.
Ingredients

2 tsp peanut butter
- no sugar added

1/2 tsp olive oil

1 tsp seasoned rice vinegar

1 tsp agave
- or honey

1 tsp soy sauce

1/8 tsp sesame oil

1/4 lime
- juiced

1 cup cole slaw mix

2 tsp cilantro
- chopped

3 tbsp edamame
- shelled

1/2 green onion
- chopped

2 tbsp carrots
- shredded

2 tbsp red pepper
- diced

1/3 cup chicken
- cooled and shredded or chopped
Instructions
- Make the Dressing: Blend all peanut dressing ingredients until smooth. Set aside or refrigerate if making ahead.
- Assemble the Salad: In a large bowl, combine coleslaw mix, cilantro, edamame, green onion, carrot, bell pepper, and chicken.
- Toss with dressing.
