  1. Combine all seasonings and season roast on all sides. Heat oil in Instapot or in large skillet. Sear roast on all sides for about 1 min each side, then put in slow cooker. Cover with broth and slow cook for 8-9 hours. Shred meat with two forks (pull meat apart), and squeeze with juice of one lime. Top with fresh cilantro.
