Beet Salad with Greens
Beets are known for their vibrant color, earthy flavor, and numerous health benefits.
Ingredients

1 cup mixed greens
- can substitute power greens

1/2 cup beets
- cooked, chopped; can be found prepared in the produce section

1 oz goat cheese
- crumbled; omit if dairy-free

1 tbsp hazelnuts
- chopped; optional

3/4 tbsp olive oil

1 tsp balsamic vinegar
- can substitute apple cider vinegar

salt & pepper
- to taste
Instructions
- Dice beets.
- Toast chopped hazelnuts slightly in a hot pan, careful not to burn.
- Mix the olive oil and vinegar, and add salt and pepper to taste.
- Toss all the ingredients together for a yummy salad.
