Brazilian Fish Stew
This hearty stew features tender chunks of fish simmered in a rich and fragrant broth and bursts with exotic flavors and colorful ingredients.
Ingredients

1/4 lb white fish
- firm variety

1 1/2 tsp lime juice
- freshly squeezed

1 1/2 tsp olive oil

1/4 cup carrots
- diced

1/4 red pepper

1 clove garlic

1/8 jalapeno
- finely chopped

1/8 onion
- diced

3/4 tsp tomato paste

1/2 tsp paprika

1/4 tsp cumin

1/4 cup chicken
- or fish stock

2 tbsp tomatoes
- fresh is best; diced

1/2 cup coconut milk

Instructions
- Cut fish into 2” pieces and toss with lime juice.
- Add olive oil to a large pan and place over high heat. Add garlic, onion, and salt. Stir and cook for 3 min.
- Turn the heat to medium and add carrot, pepper, and jalapeño and cook 5 min. Add tomato paste, spices, stock, tomatoes, and coconut milk. Stir well, place fish in stew, and cover. Cook for about 5 min.
- Serve over rice (optional) and top with cilantro and lime wedge.
