Carrot Egg Muffins
These little energy gems make for a great breakfast or a perfect snack!
Ingredients

3 carrots

1 egg

1/4 green onion

1 1/2 tsp feta cheese

Instructions
- Preheat oven to 350º.
- Grease muffin pan.
- Put carrots and eggs in blender. Blend until carrots are the size of rice and place in a bowl.
- Thinly slice green onion and add to the bowl. Add salt and pepper to taste.
- Pour the egg mixture into muffin tin. Top with feta crumbles. Cook for 15 minutes or until eggs are set.
