Carrot Egg Muffins

Instructions

  1. Preheat oven to 350º.
  2. Grease muffin pan.
  3. Put carrots and eggs in blender. Blend until carrots are the size of rice and place in a bowl.
  4. Thinly slice green onion and add to the bowl. Add salt and pepper to taste.
  5. Pour the egg mixture into muffin tin. Top with feta crumbles. Cook for 15 minutes or until eggs are set.
