Chicken and Pepper Frittata
A frittata is an egg-based Italian dish similar to an omelet. This hearty meal can be served for breakfast, lunch, or dinner.

1/2 cup chicken breast
- cooked and diced

1/2 cup peppers
- sauteed

1/2 cup onions
- sauteed

3 eggs
- beaten

1 1/2 tsp fresh parsley
- chopped

salt and pepper

Instructions
- Preheat oven to 325 degrees.
- Use an oven-safe pan and add olive oil to coat the bottom of the dish.
- Add sauteed onions, peppers, and cooked and diced chicken to the baking dish.
- Pour the beaten eggs over the onions, peppers, and chicken.
- Add parsley and put the baking dish into preheated oven. Cook for about 10-15 minutes or until eggs are set.
