Chicken (or Turkey) Fajita
This classic Mexican dish is a favorite!
Ingredients

1/2 cup chicken
- cooked and diced, can substitute turkey

1 tortilla

1/4 cup peppers
- roasted

1/4 onion
- roasted

1/4 zucchini
- roasted

1/4 cup salsa
- your choice, no sugar added
Instructions
- Preheat oven to 425º.
- Place the diced vegetables on a baking sheet. Drizzle with olive oil and roast in the oven for 20-25 minutes or until tender.
- Combine the vegetables, cooked chicken, and salsa in a bowl.
- Place the mixture in a tortilla, wrap, and enjoy!
