Clam Chowder - M & A

Ingredients

2 slices bacon
- uncured/no nitrate; cooked and crumbled

1 green onions
- sliced

1 cups potatoes
- diced; I recommend golden potatoes

1/3 cup celery
- sliced

2/3 cloves garlic
- minced

6 oz clams
- in juice, undrained, chopped

1/3 cup vegetable broth

1/4 tsp white pepper

1/6 tsp dried thyme

1/3 tsp salt

2/3 cups almond milk
- unsweetened

1/6 cup fresh parsley
Instructions
- Add bacon, green onions, potatoes, celery, garlic, clams, broth, white pepper, thyme, salt and the juice to a large pot. Cover and simmer over med/low heat for 20 minutes or until potatoes are just just soft.
- Add milk and cook additional 5 minutes until hot. Pour into bowls and top with parsley.
