Egg-cellent Breakfast (with Tomato, Basil and Mozzarella)
This breakfast featuring mozzarella, tomato, and a perfectly cooked egg on top offers a satisfying combination of creamy cheese, juicy tomatoes, and a rich, runny egg yolk. It's a hearty and flavorful meal!
Ingredients

2 tbsp vegetable broth
- can substitute chicken broth

1 tsp olive oil

1 tomato
- large, diced

1/2 cup basil
- fresh, chopped

1 slice mozzarella
- fresh mozzarella is best

1 egg

salt and pepper
- to taste
Instructions
- Put broth and oil in a small pan.
- Add tomatoes and basil.
- Crack the egg and gently place on top of tomatoes and then place cheese on top of egg.
- Cover and cook over medium heat until egg is cooked - approximately 5 minutes.
