  1. Add oils to pan and cook over medium heat. Add ginger and half of the sliced green onions. Cook for 1 minute. Add broth and soy sauce and bring to low boil.
  2. Beat eggs in a separate bowl. Slowly pour eggs into the soup in a circular motion. Cook for 1 minute, turn off the heat, let it sit for 30 seconds, and then gently stir.
  3. Pour into bowls and top with the remaining sliced green onions.
