Fish With Chorizo, Sun-dried Tomatoes and Mashed Peas
This is a fun way to jazz up fish and will not disappoint!
Ingredients

1/3 cup peas
- if frozen, thaw

1 tbsp olive oil

4 oz red snapper
- can substitute your favorite fish

1 1/2 oz chorizo

1 tbsp sun-dried tomatoes
- diced
Instructions
- Cook chorizo in a pan over a medium-high pan and let oils release from chorizo.
- Remove chorizo and then lay fish in the pan and cook for about 4 min (cook time depends on the type of fish and thickness), flip, and cook on the other side for about 3 min. or until fish is cooked through.
- In a small blender, add 1 cup of peas and olive oil. Blend until almost smooth. Add salt and pepper to taste.
- Place fish on a plate and top with blended peas. Sprinkle chorizo and sun-dried tomatoes.
