Healthy Breakfast: Veggies with a Poached Egg
Ingredients

2 tbsp broth
- vegetable or chicken

1 cup spinach
- packed

1/2 cup mushrooms
- sliced

1/2 cup tomatoes
- diced

1 egg
Instructions
- Pour broth in a small frying pan and add spinach, mushrooms and tomatoes. Cook over medium heat stirring often.
- Crack egg and gently pour on top of vegetables. Cover pan with a lid. Cook for approximately 4 min. or until egg is cooked.
- Garnish with whatever herbs or spices you like best, or serve with an optional side of avocado for even more flavor!
