(Healthy!) Fried Chicken

This chicken is still fried but in a healthy oil and not much of it!

Instructions

  1. Whisk egg for egg wash.
  2. Butterfly chicken breast to create a thinner piece of chicken to allow faster cooking time.
  3. Coat chicken in corn meal, then the egg wash, then finally in bread crumbs (make sure to coat both sides!).
  4. Place chicken in a heated pan with 1 tablespoon of oil. Cook, flipping the chicken occasionally so as not to burn.
  5. Top with some sprigs of your favorite herbs if you would like and enjoy!
