(Healthy!) Fried Chicken
This chicken is still fried but in a healthy oil and not much of it!
Ingredients

1 large chicken breast
- can substitute 2 chicken thighs

1 egg
-
1/3 cup cornmeal
-
1/2 cup bread crumbs
-
1 tbsp grape seed oil
- or avocado oil
-
herbs
- your choice
Instructions
- Whisk egg for egg wash.
- Butterfly chicken breast to create a thinner piece of chicken to allow faster cooking time.
- Coat chicken in corn meal, then the egg wash, then finally in bread crumbs (make sure to coat both sides!).
- Place chicken in a heated pan with 1 tablespoon of oil. Cook, flipping the chicken occasionally so as not to burn.
- Top with some sprigs of your favorite herbs if you would like and enjoy!
