Italian Caponata

  1. Heat up a frying pan to medium heat and add tbsp olive oil, garlic, onion. Cook for about 5 minutes and stir occasionally so it doesn't burn.
  2. Add all other ingredients and continue to stir.
  3. Add a cup of water and reduce heat to low to simmer for 40-60 minutes. After that time, remove from heat and place in a bowl to cool.
