Italian Caponata
Enjoy the delicious flavors of Sicily with this homemade caponata! Eat hot, cold, as a sandwich spread, or as a topping on toast or crackers!
Ingredients

1/2 tomato
- ripe

1 clove garlic
- roughly chopped

1/4 cup eggplant
- diced

1 1/2 tsp basil

2 tbsp onion
- diced

1 1/2 tsp balsamic

1 1/2 tsp olives
- chopped, pits removed

1/4 cup water
Instructions
- Heat up a frying pan to medium heat and add tbsp olive oil, garlic, onion. Cook for about 5 minutes and stir occasionally so it doesn't burn.
- Add all other ingredients and continue to stir.
- Add a cup of water and reduce heat to low to simmer for 40-60 minutes. After that time, remove from heat and place in a bowl to cool.
