Jambalaya
This easy Cajun jambalaya recipe is SO good, so flavorful, and so easy to make.
Ingredients

1 1/2 tsp butter
- can substitute olive oil

1/4 onion
- chopped

1/4 bell pepper
- chopped

1/4 clove garlic
- minced
-
4 oz andouille sausage
-
1/2 cup tomatoes
- canned, diced

3/4 tsp Cajun seasoning
-
1/2 cup cooked rice
-
1/8 cup fresh parsley
-
hot sauce
- optional
Instructions
- Add butter/oil to the pan and cook over medium heat. When the pan is hot add onion, pepper, and garlic. Cook for 5 minutes. Add sausage and cook an additional 3 minutes.
- In a separate bowl add diced tomatoes and cajun seasoning, and stir. Add cooked rice and stir well.
- Add rice mixture to a pan with vegetables and sausage. Stir well, cover, and cook over low heat for 5 minutes (or until heated).
- Dish onto plates and sprinkle with fresh parsley and hot sauce.
