Lemon Garlic Baked Salmon

  1. Preheat oven to 375°F (190°C). Line a small baking tray with parchment or lightly grease it.
  2. Make the marinade: In a small bowl, mix olive oil, garlic, lemon zest and juice, Dijon mustard, salt, pepper, and oregano.
  3. Season the salmon: Place the fillet on the tray and brush the marinade over the top.
  4. Bake for 12–15 minutes, or until salmon flakes easily with a fork (internal temp around 130–135°F for medium).
  5. Garnish and serve with parsley and a wedge of lemon, if desired.
