Lemony Fish over Zucchini Noodles

Delicate fish fillets are infused with zesty lemon flavors and perfectly complemented by the fresh and light zucchini noodles.

  1. Dust the fish in flour.
  2. Heat a quarter of the olive oil in a pan. When hot add fish. Cook until golden and flip. Cook for another 3-5 min. Set aside.
  3. In a separate pan, add 1/4 of the olive oil. When hot add garlic and cook until almost golden. Add zucchini noodles, lemon zest, and juice and cook for about 4 min or until “noodles” are soft.
  4. In a separate bowl, combine tomatoes, avocado, onion, the remaining olive oil, salt and pepper.
  5. Place noodles on a plate and top with the fish and cover with tomato mixture. Top with fresh basil & Parmesan ribbons.
