Mushroom, Arugula and Goat Cheese Frittata

  1. Preheat the oven to 375.
  2. Beat the eggs and milk together and set aside.
  3. Melt the butter over medium-high heat in an oven-safe pot. Add the mushrooms and cook until almost soft. Then add the arugula, stir,  and let it wilt. Add the eggs/milk. Crumble the goat cheese over it.
  4. Pour into prepared baking dish and bake for 20 minutes or until set.
