Mushroom, Arugula and Goat Cheese Frittata

1/8 cup milk
- almond, coconut, or cow's

1/4 tbsp butter

1/4 cup mushrooms
- sliced

1/4 cup arugula
- packed, chopped

1/16 cup goat cheese
- crumbled
Instructions
- Preheat the oven to 375.
- Beat the eggs and milk together and set aside.
- Melt the butter over medium-high heat in an oven-safe pot. Add the mushrooms and cook until almost soft. Then add the arugula, stir, and let it wilt. Add the eggs/milk. Crumble the goat cheese over it.
- Pour into prepared baking dish and bake for 20 minutes or until set.
