Mushroom Gravy
Mushroom gravy is a versatile and flavorful sauce that can be paired with various dishes including meats, potatoes, pasta, and vegetables.
Ingredients

1/4 tsp olive oil

1 tbs yellow onions
- finely chopped

1/4 clove garlic
- minced

1 1/4 tsp flour
- unbleached or substitute with gluten-free flour

1 cup mushrooms
- such as cremini, chanterelle, morel, shiitake, and white button sliced

6 1/2 tbs chicken broth (low-sodium (use vegetable broth for vegetarian))

3/5 tsp fresh thyme
- chopped

salt and pepper
- to taste
Instructions
- Heat oil in skillet over medium heat. Add onions and garlic and cook for 2 min.
- Add flour and stir until combined.
- Add mushrooms. Cook for about 5 minutes, until the mushrooms are tender.
- Add stock mixture to the flour mixture, stirring constantly. Bring to a boil over medium-high heat.
- Add thyme and cook until the sauce thickens, about 5 minutes. Season with salt and pepper and serve.
