  1. Heat oil in skillet over medium heat. Add onions and garlic and cook for 2 min.
  2. Add flour and stir until combined.
  3. Add mushrooms. Cook for about 5 minutes, until the mushrooms are tender.
  4. Add stock mixture to the flour mixture, stirring constantly. Bring to a boil over medium-high heat.
  5. Add thyme and cook until the sauce thickens, about 5 minutes. Season with salt and pepper and serve.
