Mussels
These tender steamed mussels in a white wine broth are an easy and irresistible delight!
Ingredients

1 1/2 tsp butter
- can sub olive oil for dairy-free

1/4 shallot (finely chopped (can sub 1/2 an onion))

1/2 clove garlic
- finely chopped

1/4 lb mussels
- cleaned
-
2 tbsp dry white wine
-
1/4 lemon
- freshly squeezed
-
1 tbsp fresh parsley
- chopped
-
salt
- to taste
Instructions
- Heat butter in a large pot over medium-high heat. Add the shallots and garlic and cook for 3 minutes.
- Add wine, lemon, butter, parsley and salt. Bring it to a simmer and add the mussels. Cover the pot immediately. Cook until mussels open about 6- 8 minutes.
- Divide the mussels and the juices into bowls. Best when served with crusty bread to soak up the sauce!
