Pecan (or any nut) Butter Cookies
Ingredients

3 dates
- pits removed and cut in half

1 egg

1 1/3 tbsp butter

1/2 tsp baking powder

1/2 tsp vanilla

1/2 tsp cinnamon

1 cup flour

1/2 cup *pecan butter
- or other nut butter; *find in FW recipes

1/2 cup pecans
- whole or halves for topping
Instructions
- Place dates in a bowl and just cover in hot water. Let soak until softened.
- Place dates in a food processor with the water and blend until mostly smooth. Add the dates and all other ingredients (except the whole or half pecans).
- Prepare a cookie sheet. Create ping-pong-sized balls with the dough and place them on the sheet. Press gently with a fork and add a whole or half pecan on top, if desired. Bake at 375° for 10 minutes.
