Pork (or chicken) and Quinoa Burrito
A tortilla packed with tons of protein and veggies!
Ingredients

1 corn tortilla
- can use flour tortillas

3 oz chicken
- sliced, can use pork

1/4 cup cooked quinoa
- cook according to package

1/4 cup salsa

1 tbs low-fat plain yogurt
- or substitute dairy-free yogurt

1/2 tomato
- diced
-
1/4 cup lettuce
- chopped, can use spinach or kale
Instructions
- Mix pork (or chicken), quinoa, salsa, yogurt, lettuce and tomato.
- Place the tortilla on a plate and divide the filling ingredients equally placing into the middle of each tortilla. Roll up and enjoy!
