Pork Stroganoff
This is a healthy way to enjoy the decadent and timeless pork stroganoff!
Ingredients

1 1/2 tsp olive oil

1/6 lb pork
- cooked, diced; can substitute chicken

1/4 cup onion
- chopped

1/2 cup mushrooms
- sliced

1/2 cup zucchini
- sliced

1/2 tsp Worcestershire sauce

3/4 tbsp flour
- may add more for thicker sauce

1/2 cup milk
-
2 tbsp sour cream
- reg, oat, cashew
-
1 tbsp plain Greek yogurt

1/4 cup cooked rice
- cooked according to package; can substitute quinoa or pasta

salt and pepper
- to taste
Instructions
- Put oil in a large skillet over medium heat. Add onion, zucchini and mushrooms and cook for 5 minutes.
- Add flour to the skillet, stir slowly.
- Add milk, stirring until sauce begins to thicken.
- Add salt, pepper, Worcestershire sauce, sour cream and yogurt. Stir, and heat through.
- Serve over quinoa, rice or pasta if desired, and enjoy!
