Quick & Healthy Pancakes
These pancakes topped with peanut butter are made with mashed banana for a moist, tender breakfast or an afternoon snack!
Ingredients

1/2 banana
- the riper the banana, the sweeter your pancake will be

1 egg

1 tsp coconut oil

1 tsp peanut butter
- topping
Instructions
- Put eggs and banana in a food processor or blender and blend until smooth.
- Melt coconut oil in a pan over medium heat.
- Pour 1/2 of the mixture into the pan and cook until lightly browned on both sides.
- Top with peanut butter and enjoy!
