Roasted Fennel with Lemon & Parmesan
Fragrant and versatile, roasted fennel makes the perfect side dish or is a delicious ingredient in salads and pasta.
Ingredients

1/2 bulb fennel
- stems removed & chopped

1/4 tsp salt

1/4 tsp lemon zest

1/8 lemon lemon
- juiced

1 tbsp parmesan
- grated

1 tbsp olive oil
Instructions
- Preheat oven to 400°.
- In a small bowl mix together oil, zest, lemon juice, and salt. Pour over fennel and toss to coat.
- Place parchment paper on a baking sheet. Add fennel and cook for 15 minutes. Add parmesan and cook for an additional 15 minutes. Enjoy!
