Salmon Salad
Ingredients

1/2 lb salmon
- cooked and cooled

1 scallion
- sliced

2 tbsp fresh dill
- chopped

1/4 cup celery
- chopped

1 tbsp mayonnaise

2 tbsp plain yogurt

1 tbsp lemon juice
- freshly squeezed

1 tsp Dijon mustard

1/2 cup spinach
- chopped
Instructions
- Bake salmon in the oven at 425º for 12-15 minutes or until the desired doneness.
- In a big bowl, combine the rest of the ingredients and mix well. Add flaked salmon and mix. Enjoy!
