Seared Salmon with Tomato, Pepper Relish
Salmon is delicious but top it with this amazing relish and it is out of this world!
Ingredients

1/4 pound salmon

1 tbsp red peppers
- chopped

1 tbsp tomatoes
- diced

1 tbsp onion
- diced
-
1 1/2 tsp balsamic vinegar
-
1 tbsp fresh basil (chopped (use parsley for filming, basil froze))

1 1/2 tsp olive oil
- divided
-
salt and pepper
- to taste
Instructions
- In a small pot add 1/3 the oil and heat over medium heat. Add onions and cook until soft. Add vinegar and stir. Add peppers and cook for 2 minutes. Remove from heat and add tomatoes.
- In a separate skillet add the remaining oil. When hot, add the salmon - skin side up. Cook for 4 minutes or until seared. Turn heat to low. Flip and cook until cooked throughout (time varies according to thickness).
- Top with tomato relish and fresh basil.
