Seared Salmon with Tomato, Pepper Relish

Salmon is delicious but top it with this amazing relish and it is out of this world!

Instructions

  1. In a small pot add 1/3 the oil and heat over medium heat. Add onions and cook until soft. Add vinegar and stir. Add peppers and cook for 2 minutes. Remove from heat and add tomatoes.
  2. In a separate skillet add the remaining oil. When hot, add the salmon - skin side up. Cook for 4 minutes or until seared. Turn heat to low. Flip and cook until cooked throughout (time varies according to thickness).
  3. Top with tomato relish and fresh basil.
