Shrimp Lo Mein
This classic Chinese dish features succulent shrimp, tender noodles, and crisp vegetables tossed in a savory sauce.
Ingredients

2 2/3 ounces brown rice noodles
- usually found in the Asian section of the store

2 tsp coconut oil

1/3 pound medium shrimp
- peeled and deveined

1/4 cup snow peas
- trimmed

1 1/3 scallions
- thinly sliced

2/3 cloves garlic
- chopped

4 tsp oyster sauce
- found in the Asian section of the store

2 tsp rice vinegar

1 tsp soy sauce

Instructions
- Cook Noodles according to package.
- Heat oil in a large pan over high heat. Add shrimp, snow peas, scallions and garlic. Stir while cooking. Cook for about 3 minutes.
- Add oyster sauce, vinegar, and soy sauce. Stir.
- Add the noodles and stir.
- Serve and sprinkle with crushed red pepper.
