Shrimp Rolls
Succulent shrimp are tossed with creamy mayo, crunchy celery, and zesty herbs to create this scrumptious salad.
Ingredients

1/4 pound shrimp
- peeled and deveined

1/4 stalk celery

1/4 green onion

1 tbsp mayonnaise
- no sugar added

1/4 tsp dried dill

1/4 tbsp lemon juice

1/4 tsp horseradish

1/4 tsp vinegar

salt
- to taste
Instructions
- Cook shrimp in boiling water until just cooked (2-3 Min). Drain and let cool.
- In a bowl, combine celery, onion mayonnaise, horseradish, vinegar, lemon juice, and salt. Chop shrimp and add to the bowl. Stir well.
- Scoop the mixture into lettuce leaves or a whole wheat bun.
