Sweet Potato Bread
This moist and flavorful loaf is made with pureed sweet potatoes, warm spices like cinnamon and nutmeg, and a hint of honey and raisins. It is an ideal treat for breakfast or dessert.
Ingredients

1 1/2 cups sweet potato
- cooked until soft and do not use the peel

2 eggs

1 tbs orange juice
- concentrate

1/4 cup coconut oil
- melted

1/4 cup coconut flour

1/4 cup almond flour

1 tbs xanthan gum

1 tsp baking soda

1/4 cup raisins
- can substitute dried cranberries

1 tbs raw honey
- optional

1 tsp cinnamon

1 tsp nutmeg

coconut oil
- to be used for preparing pan
Instructions
- Preheat oven to 350ºF.
- Put the first 4 ingredients into a blender, blend until smooth, and pour into a large bowl.
- Add remaining ingredients and stir well.
- Use coconut oil to grease your loaf pan.
- Place mixture into 1 large loaf pan or 2 small ones. Bake for 30-40 minutes or until the middle is set and a toothpick inserted into the center comes out clean. Enjoy!
