Turkey Skillet with Sweet Potatoes and Kale
This one-pot meal is a scrumptious combination of textures and flavors.

1/4 lb ground turkey
- lean

1/4 cup onion
- diced

1/2 cup sweet potato
- peeled and diced into chunks

3/4 cup kale
- can substitute spinach

1 tbsp goat cheese
- crumbled

salt and pepper
- to taste

parsley

Instructions
- Heat pan on stovetop and add ground turkey and diced onion. Brown meat, breaking up until cooked through.
- Add the sweet potatoes and cover. Cook until tender, about 15 minutes.
- Add kale (or spinach) and cook until wilted.
- Add the goat cheese.
- Garnish with parsley, if desired.
