Vegetable and Beef Soup
Grab a hearty bowl of comfort with this soup that has a little bit of everything!
Ingredients

1/4 lb ground beef
- lean, grass-fed recommended

3/4 cup chicken broth

1 cup tomatoes
- crushed, canned

1 1/4 cups vegetables of your choice
- diced; onion, zucchini, carrots, celery recommended

1/2 cup dark greens
- packed; recommend kale and spinach

1/4 tsp smoked paprika

1/4 tsp dried tarragon

1/8 lemon juice
- freshly squeezed

feta chesse
- optional topping
Instructions
- Cook beef in a pan. Add remaining ingredients and cook until vegetables are soft. I like to serve with crumbled feta on top.
