Vegetable Bread Pudding with Blue Cheese

Ingredients

2/3 cup vegetables
- cooked, pick your favorites/frozen veggies will work

4 tsp blue cheese
- crumbled

2/3 slice bread
- cut into cubes

1 egg

2 1/2 tbsp flour

4 tbs almond milk
- no sugar added; can substitute cow's milk

cooking spray
- be sure the spray has only oil listed as ingredients. I suggest avocado or grape seed oil
Instructions
- Preheat the oven to 375º and use the cooking spray to coat your casserole dish. Mix all your ingredients in a casserole dish. Place in the oven and cook for 25 minutes or until set.
