Veggie Spring Rolls
Ingredients

1 sheet rice paper

1/8 cup carrots
- shredded

1/8 cup cucumbers
- sliced thin

1/4 cup lettuce

1/8 cup bell peppers
- sliced thin

1/8 cup cilantro
- fresh

1 tbsp peanut butter
- smooth or chunky

3/4 tsp rice vinegar
-
1/2 tsp soy sauce
- or liquid aminos

1/2 tsp siracha

2 tbsp coconut milk
Instructions
- Fill a large pan 1/3 way with water. Warm the water but do not boil. Add rice sheet into water, holding onto one edge. When rice sheet is slightly softened remove from water and put on plate.
- Add carrots, cucumber, lettuce, peppers, cilantro. Fold in sides and roll.
- For peanut suace,mix the remaining ingredients.
- Serve with Peanut Sauce.
