Warm Lentil and Grilled Vegetable Salad
This is a tasty way to enjoy a variety of vegetables!
Ingredients

1/2 cup black lentils
- use canned, low-sodium, and drain

1/4 tsp salt

1/8 tsp black pepper
-
2 1/4 tsp extra-virgin olive oil

2 1/4 tsp red wine vinegar

1/2 cup vegetables of your choice (recommended - zucchini, red pepper, and onion (may also look up our Grilled Vegetable Recipe))

2 leaves romaine lettuce
- chopped
Instructions
- Warm the lentils in pan on stovetop.
- Once warmed, place lentils over sliced lettuce, and add grilled vegetables.
- Combine red wine vinegar and olive oil in a bowl to create a dressing and pour it over the lentil and veggies.
- Salt and pepper to taste.
