Gnocchi with Broccolini and Sausage

- Partially fill a pot with water and bring it to a light boil. Add broccolini. Cook for 5 min. Add gnocchi to the same pot and cook an additional 5 minutes or until gnocchi begins to float to the top.
- In a separate pan, sauté sausage. Chop up sausage as it cooks to break into small pieces.
- Drain the broccolini and gnocchi and then add to the pan of sausage. Add the olive oil and stir.
- Plate the broccolini, gnocchi, and sausage, top with shaved* or grated Parmesan cheese, and season with salt and pepper.
- *I like to use a potato peeler for the parmesan cheese to shave longer ribbons to give it a more elegant look!
