  1. Preheat oven to 375°F. Rub cod with garlic, ginger, and olive oil - reserve 1/4 of the olive oil for the next step. Bake for 12-15 minutes.
  2. Add remaining olive oil to a pan over medium heat and sauté spinach for 2 minutes or until desire doneness.
  3. Serve with brown rice.
