- Preheat oven to 350ºF.
- In an oven-proof skillet, combine sweet potatoes and pears. Pour olive oil over the mixture and add thyme leaves. Add salt and pepper and mix.
- Add the mixture to the oven. Cook for 25-30 minutes or until potatoes are tender.
- Remove from oven. Drizzle with vinegar and sprinkle with cheese. Gently stir to combine ingredients.
- Season with salt and pepper and serve.
