  1. In a bowl, combine butternut squash, cottage cheese, oats, egg, cinnamon, vanilla, baking powder, and nutmeg. Stir until smooth.
  2. Heat a skillet with oil. Pour small portions of batter onto the skillet and cook for 2-3 minutes per side, until golden brown.
  3. Top with pecans and cooked apples if you'd like!
