Ingredients

Instructions

  1. Mix beans, peppers, corn, olive oil and cumin.
  2. Cook sweet potatoes until soft. Split each potato open.
  3. Gently remove most of the orange part and smash.
  4. Stir in bean mixture.
  5. Put yogurt, lime juice and cilantro in a blender. Blend until smooth.
  6. Drizzle yogurt sauce over sweet potatoes.
